Mushroom Steak Arugula

What You Need...

Aprx 6-8 oz. Strip, Sirloin or T-Bone Steak ( Lean Steak)

2 Green Onions (shallots)

1/4 Medium White Onion

1 small can No Salt Mushrooms or about 4 fresh

10-12 pieces baby spinach (Arugula)

1/2 tsp. Parsley Flakes or 2 sprigs fresh

Salt Substitute and pepper to taste

1 Tbs. Olive Oil

1 Tbs. Unsalted Margarine (if desired)

Lightly brown your Onions, Shallots, mushrooms in a fry pan in the olive oil. You may cook your steak in the same pan or grill it if you prefer. You'd want to cook your steak 5 -8 minutes on each side depending on the size of the steak. Do not add the baby spinach in till the last 5 minutes of cooking. hen all is done cover your steak with your vegetable mixture and serve. You may serve over rice as shown but the fat and sodium content below does not include the rice.
