Peanut Butter Marshmallow Cookies

What You Ne ed..
Vegetable Oil Cooking Spray
1/2 Cup Flieschmans Un-Salted Margarine
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 Medium Egg
1 Cup Low Sodium / Unsalted peanut Butter
1/2 Tsp. Vanilla Extract
1 1/2 Cup All Purpose Flour (Make sure No Sodium content)
1 1/4 tsp. Baking powder preferably no or low sodium
3/4-1 cup Mini Marshmallows
Preheat your oven to 350º and prepare your cookie sheets by pre-spraying them with cooking spray. In a large bowl cream together your unsalted margarine and both sugars. Stir in one egg. Add the peanut butter and vanilla and thoroughly mix or beat. Lastly, add your marshmallows and fold in to the dough .
In another bowl mix the flour and baking powder together. Add in the peanut butter marshmallow mixture and mix together well. Form 1 1/2 to 2 inch dough balls and place on your pre sprayed cookie sheet about 3 inches apart. Flatten the dough ball slightly with a fork. Bake 15 minutes at 350º and allow to cool 3-5 minutes before removing them from the cookie sheet, they will be very soft. Then transfer to cooling racks.
Makes about 40-48 cookies
